What Does "Yoshoku" Mean?

The word Yoshoku (洋食) literally means "Western food."

At first, these cutlets were prepared much like their European counterparts—using thinner slices of meat and eaten with a knife and fork.

As the dish became popular in Japan, chefs gradually adapted it to suit Japanese tastes and dining customs.

They began using thicker cuts of pork, coating them with crisp panko breadcrumbs, and deep-frying them to create a richer texture while keeping the meat juicy.

Another important part of this transformation was the sauce.

In the early days of tonkatsu, it was commonly enjoyed with Worcestershire sauce, a British condiment that had already become popular in Japan.

Its tangy, slightly sweet flavor paired beautifully with fried foods and became the standard accompaniment for tonkatsu.

Later, a thicker and sweeter tonkatsu sauce was developed specifically for this dish and became popular throughout Japan.
